Vinification

Grapes are soft pressend without oxygen. Fermentation begins after the inoculation and is carried out at 15 – 16° C. After 6 months of aging on the lees, the second fermentation takes place in pressurized tank (Martinotti Method). This sparkling wine spends another 3 months on the lees before bottgling.

Fine perlage drags to the nose sensations of red fruits. The taste is balanced, marked acidity well contrasted by sapidity
