Grapes are soft pressend without oxygen. Fermentation begins after the inoculation and is carried out at 15 – 16° C.
After 6 months of aging on the lees, the second fermentation takes place in pressurized tank (Martinotti Method).
This sparkling wine spends another 3 months on the lees before bottgling.
Fine perlage drags to the nose sensations of red fruits. The taste is balanced, marked acidity well contrasted by sapidity
Aperitifs, first courses, white meat main courses, fish dishes, grilled meats.
