Vinification

The drying of the grapes is not carried out on racks in post-harvest as in many cases, but directly on the plant after cutting the fruiting head and with partial intervention of botrytis (noble rot). After arriving at the winery, the grapes undergo pressing and the fermentation process begins, which, due to the high presence of sugars, will take place very slowly and steadily. The resulting wine will be aged for about a year in barriques.

Tasting

The nose is complex and enveloping. The impression is that of discovering a different nuance with each taste. Notes of ripe yellow-fleshed fruit intersect creating a unique complexity. Completing the bouquet is a final hint of honey. In the mouth, the wine does not disappoint what was perceived on the nose. In fact, the product is enveloping and deep, and its sweetness combined however with a good acid component make it pleasant and never cloying.

Pairing

Sweet and fragrant, it is well suited to accompany several desserts, as well as a wide variety of cheeses and cured meats.
